If you’re a fan of chicken salad, a new restaurant coming near the University of Central Florida this summer will offer 15 different types of the dish to satisfy your cravings.

Auburn, Ala.-based Chicken Salad Chick this summer will open its first metro Orlando restaurant — a 3,000-square-foot, 50-seat eatery at the Plaza on University development — and is eyeing Winter Park and Lake Nona sites for its next two eateries. The concept features homemade chicken salads, side salads, desserts and beverages and first announced plans to come to Orlando last fall.

John Artope of SRS Real Estate Partners represents the restaurant in its Orlando-area site selection; franchisees Adam Reeves and Carol Lynn Upshaw of City Chick LLC will operate the restaurants.

Meanwhile, Emeryville, Calif.-based Jamba Juice is working on its second and third locations for the Orlando area.

The smoothie shop and cafe’s local franchisee Longwood-based Healthy Choices Orlando LLC plans to open a 1,330-square-foot store on May 20 next to the Buffalo Wild Wings in the Crossroads at Lake Buena Vista plaza. Jamba Juice will replace the former Sony electronics store.

In addition, Jamba Juice will join the lineup of new tenants in The Florida Mall’s new promenade opening this summer. Jamba Juice will have a 260-square-foot kiosk opening June 1 in the center aisle of the revamped food court.

Each Jamba Juice location looks to hire about three to four permanent workers, as well as six to eight part-time employees.

Jamba Juice’s first Central Florida store opened last May in the Dr. Phillips Marketplace shopping center on Sand Lake Road in southwest Orlando.
